Ribs are a popular cut of meat, usually consisting of the less meaty part of the chops, and cooked as a slab rather than cut into individual ribs. Ribs are typically slow roasted or grilled for as long as 10-12 hours for maximum tenderness.
After preparing, ribs are then typically torn apart by hand in a messy fashion so as to remind the eater of their humble origins as hunter-gatherers who had not yet invented silverware (which is why they are typically served with wet-naps).
